CHOCOLATE ALMOND DATE BALLS
Makes 30 date balls (using 2 tsp cookie scoop). Process 1 batch at a
Recipe can be made with walnuts instead, but do not overprocess walnuts.
Store leftovers in frig (for up to a week) or freeze. Serve at room temp.
1 cup unsalted dry roasted
½ cup large (gooey) Medjool
dates (7-8), pitted & packed down
¼ cup unsweetened cacao
¼ tsp sea salt
2 tsp vanilla extract
1 Tbsp water
powder, finely shredded coconut… for rolling the balls in
Directions:1. Process dates in food processor with water, until a ball forms.
2. Place remaining ingredients in processor & run until smooth (tiny almond pieces) & ball forms. Add 1 more Tbsp water if too dry.
3. Scoop mixture & roll into little balls no larger than 1". Optionally, roll balls in shredded coconut, cacao powder, cinnamon, small seeds, etc. Can be pressed into brownie shape too.
4. Refrigerate for 30 minutes to set. Ready to eat!
